For every Chef’s Table, Chef Julien Pilati creates and personalises the menu specifically for his guests, taking into consideration their tastes and preferences while drawing inspiration from the seasons, exceptional French produce and his encounters with producers. Designed as a moment outside of time, the Chef’s Table invites guests into the personal world of Julien and Laetitia Pilati. Throughout the dinner, each course unfolds through the Chef’s creativity and the stories behind the ingredients, producers and inspiration of each dish.
Flavour, textures, colours and artistic expression come together in a highly personal interpretation of contemporary French gastronomy, rooted in the terroirs of France and shaped by the influences of Champagne, Brittany and the Mediterranean.
